Happy Monday friends! That was a quick weekend! Thankfully, the hurricane headed out to sea and completely missed us.
We spent most of the weekend inside because of the weather...which means lots of art projects for Aria, the usual Aria and Harper shenanigans...
and of coarse baking something delicious.
These cookies took all of 20 minutes to make, from start to finish. Even with tiny little hands "helping". They are hearty and just sweet enough.
This recipe makes anywhere from 12 - 15 chubby cookies...depending on how much of the batter your helper eats, while rolling the cookies.
1 1/2 cups old fashioned oats
1 cup oat flour (I used our baby bullet to grind a cup of oats into oat flour)
1 tsp. cinnamon
1 tsp. vanilla
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/4 cup + 1 tbsp. maple syrup
3 tbsp. unsweetened apple sauce
3 tbsp. coconut oil
2 tbsp. hemp seeds (I like adding hemp seeds for the protein boost and the omega's)
Optional: Rasins, chocolate chips. We're crazy, so we opted for white chocolate chips.
Preheat oven to 350.
Combine all ingredients in a bowl and mix.
Roll into balls and slightly flatten. You want them to be thick, otherwise they will dry out.
Bake 10 minutes or until just beginning to golden.
